So how does that maple syrup come about?
After concerts at Canadian Music Week we were on tour for a month and a half up through eastern Canada...Ottawa, Montreal, Quebec, all very beautiful places.
We met a lovely local lady on an island just near Quebec city, who's Sugar Shack farm is fourth generation and she gave us the low down on some of the processes involved with making the maple syrup we eat. Quebec outputs the most maple syrup globally and its a special thing to see why.
